Sol's Aguadito
My daughter videotaped herself making Aguadito de Pollo for an assignment in her Spanish class. Aguadito is a Peruvian dish that relies heavily on cilantro for its rich flavor. Unfortunately, we don’t have any cilantro in our yard this year. Usually it reseeds itself and we take for granted that we will have more than we can eat in spring. This year not a single plant emerged so, I ended up planting some from seed and I’m still waiting for it to be ready. Luckily, we are swimming in onions so we harvested four good ones for the soup.
Sear 8 drumsticks in avocado oil.
Remove drumsticks and sauté 2 onions (or 4 garden onions) for 4 minutes and add 5 minced garlic of 30 seconds.
Add chicken back plus 4 cups of broth, 1 1/2 tsp salt, 1/2 tsp cumin and several shakes of black pepper.
Add 2 bunches of blended cilantro and one finely chopped head of cauliflower and cook for 5 minutes.
Cook for 10 minutes or until chicken is fully cooked.
