04.19.20 Parsley

Oh parsley! There is so much to celebrate about you. But tonight I wanted to try out the true virtue of the instapot which in my mind means throwing everything in and pressure cooking for 18 minutes. I made a big pot of lentils with most of the ingredients coming from the garden. Easy. delicious. Fast.

Instapot Lentils (so loose, grab, chop and add):

1 1/2 cups lentils, 2 diced red onions, 7 minced cloves of garlic, chopped parsley, chopped sage, thyme, chopped celery leaves, chopped cabbage and collard greens, chopped carrot, turmeric, cumin, broth or water, salt and pepper. Pressure Cook on high for 18 minutes.
