08.10.20 Pumpkin Seeds

Pumpkin Seeds are not only an excellent prebiotic, they also make a tasty snack if you season them well. I began with the scooped out seeds and pulp from my pumpkin. I washed them and removed all of the stringy pulp around the seeds. Then, I set them out to dry overnight. This large pumpkin gave me about 2 1/4 cups of dried seeds. From there, I mixed them in a bowl with 3 tbsp of avocado oil, 1 tsp paprika, 1 tsp salt, 1/4 tsp cayenne pepper and 1 tsp garlic salt. I spread all of that on two lined baking sheets and roasted them at 350 degrees for 20 minutes.
