06.04.20 Beet Fries
I pulled out this gorgeous bunch of beets from the garden today. Rather than doing my usual tricks of beet soup or stir fry, I thought I would try something new. I sliced them up into fry size and sprinkled them with avocado oil, cumin, salt and pepper. I roasted them in a toaster oven at 400 degrees for 30 minutes and sprinkled on a generous amount of parmesan cheese.
