06.05.20 Pumpkin Flowers

This is why pumpkin patches fit so well into fantastical child’s stories. Just one plant is covering about an 8 x 8 foot patch of ground and she is still growing! I remember having squash flower soup in Mexico years ago and so I thought I’d make some today. I sautèed a chopped red onion for 4 minutes, added 5 minced garlic cloves for 30 seconds, added in the petals of a two handfuls of pumpkin flowers, and a diced bell pepper with 2 cups of bone broth. I let all of this simmer for about 5 minutes and then blended it smooth. I returned everything to the pot with some salt, pepper and fresh chopped parsley on top for a garnish. Delicious!
