04.14.20 Yellow Crookneck Squash

If you still haven’t planted any seeds and want a fail proof, easy plan, plant some yellow crookneck squash, or any squash for that matter. The plants will grow fast and in no time you will have both flowers and fruit of your minimal labor for feasting. My guy and girls make a mean ratatouille and today it featured our first small crop of yellow crookneck squash. We are still in the middle of a major plumbing project with no running water in the kitchen making the instapot our favorite way to cook these days. Here’s what they did:

Sauté in avocado oil:

  • one diced onion for 4 minutes 

  • add in 6 cloves garlic for 30 seconds

  • add 2-3 small yellow crookneck squash, 1 zucchini, 1 medium eggplant and 1 red bell pepper all diced and cook for 5 minutes

  • Add 2 1/2 cups chopped tomatoes, 5 basil leaves, 2 tsp salt, 1/2 tsp red pepper flakes, 1/2 tsp black pepper, 1 tbsp capers and 2 bay leaves.

Pressure cook for 8 minutes

Release pressure and set to sauté:

  • Add 1 tbsp parsley and 2 sprigs thyme and cook 6 minutes

  • drizzle 2 tsp olive oil and 1 tsp balsamic vinegar to finish.
