04.13.20 Grape Leaves
Summer is around the corner, at least my grape vine tells me so. It went from a dry stick to a whirling green vine in a minute plus some rain. Since we have quite a few months before harvest and attempting our first batch of wine from our own grapes, I’ll make do with the abundant grape leaves. Today I made dolmades. I followed the herbed cauliflower rice from 01.21.20 Mallow although I used mint, oregano and thyme because that’s what growing outside. As for the grape leaves, I experimented with a 2 minute blanching followed by a 30 minute soaking of the leaves in lemon juice and olive oil. Then I rolled the leaves with the herbed cauliflower rice. It’ a whole lot easier that the recipes I saw online and my gang polished them off so I’d say it’s a go.
