11.28.20 Dandelion Chimichurri
There is something so reassuring about dandelions. They appear out of nowhere following a bit of rain, often times in the most unlikely of places. And, yet they will cure almost any ailment. I harvested a few for a variation on Chilean Chimichurri sauce. I blended dandelions, oregano, garlic, lime juice, chili flakes, salt and olive oil. It makes a bright, tasty sauce for meat, fish or beans.
