I wish this was my idea, but I saw it on Busy in Brooklyn. She used a Hachiya persimmon which practically disintegrates in your hands when it’s ready to eat, and therefore, perfect to freeze. We have Fuyo persimmons which are ready when they feel like a ripe pear. Today, I had one that had gone way beyond its perfect moment, making it ideal for freezing. It was an absolutely decadent dessert made of just one ingredient: one very ripe persimmon.
