06.20.20 Fava Leaf

It’s nothing less than magic to start with one seed and arrive at a full plant that provides three kinds of food; beans, greens and flowers. The tops of my fava bean plants are still tender enough to harvest for salads, pesto, soup, you fill in the blank. I made a simple side salad to go with dinner with just three main ingredients: fava leaves, a plum and manchego cheese. I added a little salt, olive oil and balsamic vinegar to tie the flavors together.
