12.26.20 Eggplant

Here are our last holdouts from summer, two eggplants. My guy used them to make one of our family favorite’s; ratatouille. Forgive me if this is feeling repetitious but, it has been 361 days so it’s all starting to get a little jumbled. Anyway, he cooks it in the instapot with 6 garlic, one red onion, two bell peppers, two zucchini, three tomatoes, chopped parsley, balsamic vinegar, salt, pepper and avocado oil. Then, he serves it with a drizzle of olive oil for flavor.
