10.26.20 Three Little Eggplants

These purple queens have had my attention for quite some time. They are not very big but I thought it was time to harvest because they are starting to get yellowish sun spots. Following the light rain yesterday, we are in the midst of a wind storm and forest fire warnings again. All this to say, it felt like a good day to up the garlic consumption of our household (which is already scary high). I minced a whole bulb and added some salt, paprika and avocado oil for the eggplant disks which were baked at 400 for 30 minutes and flipped half-way through.
