09.19.20 Nine of Ten Ways to Eat Figs: Baked Figs with Goat Cheese
Through trial and error, I think I found the right formula to get a warm, gently caramelized fig that is still holding onto slightly soft goat cheese. Remove the stems and make a small cross on the fig, enough to stuff a small spoonful of goat cheese inside. Add a little drizzle of olive oil and balsamic vinegar to each one; a 3 to 1 ratio, Bake for 10 minutes at 350 (I baked them for 20 and the figs began to disintegrate.) Sprinkle with pine nuts and thyme.
