05.29.20 Zucchini

This big beauty has been growing along quietly until I saw her today. I don’t know how I miss so much in the garden but there are surprises waiting for me every day. I wanted to cook our first zucchini in a simple and original way to highlight its fresh flavor. I sliced it lengthwise, drizzled on some avocado oil, added shredded parmesan cheese and Italian seasoning with some salt and pepper. Then, I baked it in a toaster oven for 13 minutes at 350 and a last broil for 5 minutes. It was heavenly.
