05.26.20 Brandywine Tomato Tikka Masala

The tomatoes are finally coming in and we are beginning to use them in some of our favorite dishes like Tikka Masala sauce. This sauce is so good, you could eat it off a shoe.

Make some and prove me wrong:

  1. Melt 2 tbsp butter in a large pan. sauté 1 large onion for 3-4 minutes.

  2. Add 2 tablespoons minced garlic and 2 tablespoons minced ginger and sauté for 1 minute until fragrant.

  3. Add 2 teaspoons garam masala, 2 teaspoons ground cumin, 1 teaspoon turmeric powder, 1 teaspoon ground coriander and sauté for about 30 seconds.

  4. Add 2 cups chopped brandywine tomatoes, 1 teaspoon cayenne pepper and 1 teaspoon salt and simmer for about 15 minutes until sauce thickens.

  5. Add 1 cup of cream and simmer for 5 minutes. Turn off heat and add in 1/4 cup chopped fresh parsley or cilantro.
