05.14.20 Abundance in Artichokes

After 6 dinners with artichokes for each of our 5 member family, I harvested 5 more and I still count 25 growing on this one plant. She is an exceptional flower; prolific, prebiotic, delicious and such fun to eat, especially for kids. I rubbed the outside with half of a lemon, added two cloves of garlic to the water and boiled them for 45 minutes. We served them with a simple dipping sauce of lemon, olive oil and salt.
