04.21.20 Roots
Today I wanted to feel more grounded so I dug up some roots for supper. Although I can’t seem to grow a carrot to save my life, I am doing fine in the kohlrabi and beet arenas. I confess my harvest was tasty but small so I added some sweet potato from the kitchen for color and substance. Everything was diced and swirled with salt and avocado oil before roasting for 30 minutes at 425 degrees.
