03.19.20 Oregano

Antiviral? Bring it on. Oregano tops the list, add in some garlic and we are almost at pesto, again. This may have been my first time making an oregano based pesto, it will not be the last. It has a strong, dense and hearty flavor. I can already feel it kicking my immune system into high gear. Blend 1 cup fresh oregano leaves, 3 cloves garlic, 1/2 cup pine nuts, 1/3 cup plus a little olive oil, 1/2 cup parmesan cheese, salt and pepper to taste.
