What I know about thyme. Dwell on the past and you may get depressed. Worry about the future and you may become anxious. Be right here, right now and you may just find peace. While you are at it, plant some thyme. It grows like a weed and it will flavor any savory dish well. When we eat meat, we buy from regenerative farms where the animals graze and forage. This pasture-raised chicken is smaller and it has more lean muscle than fat. I roast the whole bird. We eat every inch of it and then I save the bones and make bone broth with left over carrot tops, celery stalks and any other vegetable that needs a second chance.
