02.17.20 Carob Pods

Carob, we are not done yet. Now that I extracted the juice, it’s time to remove the seeds, dry the pods and grind them into a powder. You will undoubtably see a bag of this going for 12 bucks in the super food section of your local health food store, under the exotic name of algarrobo. It’s just ground carob and this one cost me nothing. Now that I have the powder, I’m going to make some funky energy bars for my girls just so they can tell me how weird I am.

To make Funky Carob Bars blend:

  1. 2 TBS carob powder

  2. 1/2 cup pumpkin seeds

  3. 1/2 cup coconut manna

  4. 5 TBS of lucuma powder (or other protein powder)

  5. 3/4 cup of nut milk

  6. 2 tsp vanilla

  7. 1/4 tsp cinnamon

  8. 1/8 tsp salt

Spread mixture into a small glass container lined with parchment paper and freeze for at least 5 hours. Then, remove and cut into pieces, eat or refreeze.
